Thrifty Thursday ~ Recipe Week



In real life pen pal, Kristin, has been hosting Thrifty Thursday and I decided to join in today!  Today she is doing recipe week and y'all know I'm all about thriftiness and cooking as cheaply as possible!  I was going to do a cheap chicken pot pie, but can't find the recipe.  I actually didn't search through my recipes.....just too tired tonight!  I did, however, find my husband's FAVORITE cookie recipe.  

I found this Peanut Butter cookie recipe YEARS ago while I was working at a doctor's office.  Hubbie and I had just gotten married and a patient that worked for the Dept of Agriculture came in with a peach cobbler and a recipe book( yes, we ate REALLY GOOD).  The book was FILLED with recipes using Georgia's biggest crops- peanuts and peaches!   I copied a few of the recipes that I thought might appeal to me and Hubbie and one of them was the cookie recipe.  I made the cookies one evening and Hubbie quickly named them his FAVORITE cookie!  They are quick, easy, cheap and SOOOOO good!  I've used these cookies for Christmas get togethers and bake and swap cookie parties because its SO cheap and makes SO many!  

Peanut Butter Cookies 

Mix the following: 
1 cup of creamy peanut butter (natural doesn't work- I've tried!!!)
1 cup of sugar
1 egg
1 teaspoon of vanilla

Use a melon ball scoop (or something similar) to place on a greased cookie sheet.  

Cook for 9-12 mins for 375 degrees (WATCH THESE CLOSELY!!!  Each oven is SO different.  Our oven that I used when we first tried this recipe, didn't get as hot as our current oven!  You may have to play around with the time and temp!)

Yields 75 cookies  


Total cost?  Hmmm..... lets break it down, shall we?!  

1 cup of Peanut butter- about a dollar
1 cup of sugar- about a quarter 
1 egg - about twelve cents 
1 teaspoon of vanilla- NO CLUE!!!  ;o)  

So rough total of these cookies would be less than $1.50!!!

We all love peanut butter and we all love cookies. And I love easy and cheap so we will have to give these a try!
